Recipe creator spent years perfecting ‘crispiest roast potatoes’ with easy trick

The perfect roast potatoes, a staple of any roast dinner, are fluffy on the inside with a perfectly crispy exterior.

Everyone has their own way of making roasties, but one recipe creator reckons she’s finally found the perfect method of making them, after many years of attempts. Amy Sheppard, who shared ‘recipes you’ll actually cook’ online, explained that it “has taken me years to figure out getting them this crispy” so she decided to share her method.

Amy, a cookbook author, always uses Maris Piper potatoes, which she peels, cuts into smaller chunks, and then “cook them up in cold, salted water until they’re just tender”. When she drains them she gives them “a really good shake to fluff up the edges”.

“Next you need to put them on a cooling rack to steam until they are completely dry,” she added in a recent TikTok video. She explained that this is a tip she picked up from Tom Kerridge, but you can also leave them in a colander to steam dry.

Your oven should be heated up to 220C, or “as close as you can get if you’re cooking other things”. Then, in a thin roasting tin, heat a “good couple of glugs” of vegetable oil – Amy says you can “forget about the Goose Fat”. When it comes to the thin, she says the “thinner the better”, and enamel is “brilliant for this”.

Then, when the oil is “spitting hot”, you should add the potatoes and turn them over in the oil “until they’re coated” and give them a generous sprinkling of salt.

You should then roast them in the oven until they are “crisp and golden”, turning them over once in the pan to make sure they are coated in the hot oil. According to Amy, they usually take “40 minutes to 1 hour depending on the size of the oven”.

Many people were thrilled with the recipe, with one person saying; “Had a lovely dinner party using this recipe and they were lovely, crispy and golden! Thank you from Canada.”
